Sweet Cucumber Pickles

Ingredients

  • 7 lbs cucumbers
  • 2 ½ lbs brown sugar
  • 2 pints vinegar
  • 1 tablespoon whole spice
  • 1 tablespoon cinnamon sticks
  • 1 tablespoon celery seed

Directions

  1. cut green cucumbers in ½ pieces
  2. Soak them in strong brine for 3 days. (A strong brine is salty water strong enough to float an egg)
  3. Drain and soak them in fresh water for 3 days without changing water, but stir once or twice.
  4. Drain again and simmer slowly 20 or 30 minutes in cider vinegar diluted ½.
  5. Add 2 or 3 grape leaves and drain
  6. Boil the 2 pints of vinegar and other ingredients 3 minutes and pour over cucumbers boiling hot. Let stand 24 hours. Then drain off liquid
