Sweet Cucumber Pickles
Ingredients
- 7 lbs cucumbers
- 2 ½ lbs brown sugar
- 2 pints vinegar
- 1 tablespoon whole spice
- 1 tablespoon cinnamon sticks
- 1 tablespoon celery seed
Directions
- cut green cucumbers in ½ pieces
- Soak them in strong brine for 3 days. (A strong brine is salty water strong enough to float an egg)
- Drain and soak them in fresh water for 3 days without changing water, but stir once or twice.
- Drain again and simmer slowly 20 or 30 minutes in cider vinegar diluted ½.
- Add 2 or 3 grape leaves and drain
- Boil the 2 pints of vinegar and other ingredients 3 minutes and pour over cucumbers boiling hot. Let stand 24 hours. Then drain off liquid
