Pumpkin Cookie

Ingredients

• 1/2 cup shortening
• 1 1/4 cup packed Brown sugar
• 2 eggs
• 1 teaspoon vanilla
• 1 1/2 cup pumpkin
• 2 1/2 cups sifted flour
• 1 teaspoon baking powder
• 1/2 teaspoon salt
• 1/2 teaspoon cinnamon
• 1/2 teaspoon nutmeg
• 1 cup raisins, if desire; 1 cup nuts, if desire

Directions

1. Cream shortening, sugar and add eggs and Beat.
2. Mix Vanilla and pumpkin in.
3. Add dry ingredients and mix well.
4. Stir in raisins and nuts.
5. Drop on greased cookie sheet With teaspoon or #40 scoop.
6. Bake at 350° degree oven about 8 to 10 minutes.
