Pumpkin Cookies

Ingredients

• 1/2 cup shortening
• 1 1/4 cup packed Brown sugar
• 2 eggs
• 1 teaspoon vanilla
• 1 1/2 cup pumpkin
• 2 1/2 cups sifted flour
• 4 teaspoon baking powder
• 1/2 teaspoon salt
• 1/2 teaspoon cinnamon
• 1/2 teaspoon nut meg.
• 1 cup raisins
• 1 cup nuts (walnuts)

Directions

1. Cream shortening + sugar and add eggs + mix well.
2. Mix in vanilla and pumpkin.
3. Add dry ingredients & mix.
4. Stir in raisins & nuts.
5. Bake at 350 degree oven about 8-10 minutes
6. Use #40 scoop to drop cookies
