Molasses Barbecued Spareribs

Yield: Makes 6 servings.

Ingredients

  • 3 pounds fresh pork spareribs
  • 4 tablespoons dark old-fashioned molasses
  • 3 tablespoons cider vinegar or lemon juice
  • 4 tablespoons prepared yellow or brown mustard
  • 2 tablespoons tabasco sauce
  • ½ teaspoon kitchen bouquet
  • Worcestershire

Directions

  1. Have spareribs cut in serving-size pieces.
  2. Place in shallow pan—about 11 by 17 by 2 inches is a good size.
  3. Mix molasses, vinegar, mustard, Worcestershire, tabasco and kitchen bouquet.
  4. Brush spareribs with sauce.
  5. Bake in moderate (350F) oven 1½ hours, brushing ribs often with sauce.
  6. For backyard barbecue, reserve about ¼ of the sauce used during oven baking.
  7. Place spareribs on outdoor grill and cook ½ hour longer, brushing with reserved barbecue sauce.
