MINCEMEAT FILLED COOKIES:

Ingredients

  • ½ cup butter or other shortening;
  • 1 cup sugar;
  • 2 eggs; (unbeaten)
  • 2 tablespoons thick cream (either sweetoor sour)
  • 1 teaspoon vanilla;
  • 2½ cups sifted (all-purpose) flour;
  • ¼ teaspoon soda;
  • ½ teaspoon salt;
  • ½ cup raisins, finely cut;
  • 1 cup mincemeat, (moist)
  • 1 cup dates, finely cut;
  • ½ cup sugar;
  • 3 tablespoon lemon juice;
  • ½ cup water (about);

Directions

  1. Mix thoroughly: ½ cup butter or other shortening; 1 cup sugar; 2 eggs; (unbeaten) 2 tablespoons thick cream (either sweetoor sour) 1 teaspoon vanilla;
  2. Sift to-gether: 2½ cups sifted (all-purpose) flour; ¼ teaspoon soda; ½ teaspoon salt;
  3. Stir this into the sugar mixture and chill (over night) or until thoroughly chilled
  4. Roll very thin. Cut into 3 in. rounds. Place them on a lightly greased baking sheet. On each round place 1 teaspoon (rounded) of filling. On top of the filling, place another round which has a hole cut in the center. Press the edges to-gether. Bake until lightly browned at 400 degree.
  5. THE MINCEMEAT FILLING: Cook slowly until thick, (about 10 minutes, Cool.
