Chocolate Drops
Yield: Makes 18 big treats.
Ingredients
- 3 to 4 squares chocolate (unsweetened)
- 1 cup milk
- 1/4 teas. salt
- 2 cups sugar
- 1 teas. butter
- 1 teas. vanilla
- 16 marshmallows, quartered
- 16 marshmallows, quartered, or about 1/2 cup of little marshmallows
- 2 1/2 cups coarsely crushed graham cracker crumbs.
- 1 cup walnuts, chopped.
Directions
- Cook milk with chocolate over low heat. Stir until smooth.
- Add sugar, salt. Stir till mixture boils, taking care to scrape sugar crystals from sides of pan.
- Cook to soft ball (224° to 230°F).
- Remove from heat. Add butter, vanilla don’t stir. Cool to lukewarm.
- Stir in rest of ingredients. Drop by teaspoonfuls on wax paper and cool.
Temperature
- low heat, mixture boils, soft ball at 224 to 230 degrees F, cool to lukewarm, and final cool
Equipment
- saucepan, stirring and scraping utensil, candy thermometer or equivalent soft-ball test, teaspoon, and wax paper
