Chocolate Drops

Yield: Makes 18 big treats.

Ingredients

  • 3 to 4 squares chocolate (unsweetened)
  • 1 cup milk
  • 1/4 teas. salt
  • 2 cups sugar
  • 1 teas. butter
  • 1 teas. vanilla
  • 16 marshmallows, quartered
  • 16 marshmallows, quartered, or about 1/2 cup of little marshmallows
  • 2 1/2 cups coarsely crushed graham cracker crumbs.
  • 1 cup walnuts, chopped.

Directions

  1. Cook milk with chocolate over low heat. Stir until smooth.
  2. Add sugar, salt. Stir till mixture boils, taking care to scrape sugar crystals from sides of pan.
  3. Cook to soft ball (224° to 230°F).
  4. Remove from heat. Add butter, vanilla don’t stir. Cool to lukewarm.
  5. Stir in rest of ingredients. Drop by teaspoonfuls on wax paper and cool.

Temperature

  • low heat, mixture boils, soft ball at 224 to 230 degrees F, cool to lukewarm, and final cool

Equipment

  • saucepan, stirring and scraping utensil, candy thermometer or equivalent soft-ball test, teaspoon, and wax paper
