PUMPKIN COOKIES

Ingredients

• 1/2 C. shortening
• 1 1/4 cup brown sugar (packed)
• 2 eggs
• 1 teas. vanilla
• 1 1/2 c. pumpkin
• 2 1/2 c. sifted flour
• 4 teas. baking powder
• 1/2 teas. salt
• 1/2 teas. cinnamon
• 1/2 teas. nutmeg
• 1 c. raisins
• 1 c. nuts

Directions

1. Cream shortening, sugar, and add eggs
2. BEAT: Mix vanilla and pumpkin. Add dry ingredients. Stir in raisins and nuts
3. Bake at 350
4. Drop by teaspoonfuls

• raisins and nuts may leave out
