Lemon Cookies

Yield: 5 to 6 doz.

Ingredients

• 1 cup butter
• 1/2 cup sugar
• 1/2 tsp Baking Powder
• 1 TBSP lemon juice
• 1/2 tsp grated lemon rind
• 1 egg, beaten
• 2 cup flour
• 1/8 tsp salt

Directions

1. Cream together butter or sugar add egg, mix well. Add dry ingredients
2. Combine with sugar mixture. Add lemon juice + rind.
3. Form into rolls Wrap in waxed paper, or pack into Frozen juice cans chill.
4. Slice very thin, Bake on greased cookie sheet

• chill; 350°
