Cotton Tops

Yield: makes 12 cup cakes

Ingredients

  • 1 cup sugar
  • ¼ cup shortening
  • 1 egg
  • 2 tablespoon molasses
  • ¼ cup cocoa
  • 1/3 cup milk
  • 1½ cups flour
  • 2½ teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon nutmeg
  • ½ teaspoon vanilla
  • marshmellows

Directions

  1. Sift flour, baking powder, salt, nutmeg, cocoa all to-gether. Set aside. Cream sugar and short-ening, beat well. Add egg, beat again, add molasses, beat again. Add sifted dry mixture alternately with milk and flavoring. Beat until creamy. Bake in greased muffin pans. Just before removing from oven, place ½ marshmellow on top of cake and let it melt slightly. Remove from oven as soon as marshmellow begains to melt.
  2. Bake 30 minutes in 350 degree oven.
