DATE-NUT PINWHEELS

Ingredients
- 2¾ c. pitted dates, cut up
- 1 c. granulated sugar
- 1 c. water
- 1 c. chopped nuts
- 1 c. shortening
- 2 c. brown sugar firmly packed
- 3 eggs, well beaten
- 4 c. sifted all-purpose flour
- ½ tsp. salt
- ½ tsp. baking soda
Directions
- Combine in a saucepan; cook over low heat until thick.
- Add.
- Cool mixture.
- Cream.
- Add gradually working with a spoon until light.
- Add and mix well.
- Sift together, then add to creamed mixture.
- Cover and chill thoroughly.
- Divide the mixture into two parts.
- Roll each into a rectangle a little less than ¼ in. thick. Spread each with date filling, roll as for jelly roll and wrap in waxed paper.
- Chill in refrigerator overnight.
- Then cut in ¼ in. slices, arrange on oiled or greased cookie sheet and bake in a 400° F. oven for 10 to 12 minutes.
