DATE-NUT PINWHEELS

Ingredients

  • 2¾ c. pitted dates, cut up
  • 1 c. granulated sugar
  • 1 c. water
  • 1 c. chopped nuts
  • 1 c. shortening
  • 2 c. brown sugar firmly packed
  • 3 eggs, well beaten
  • 4 c. sifted all-purpose flour
  • ½ tsp. salt
  • ½ tsp. baking soda

Directions

  1. Combine in a saucepan; cook over low heat until thick.
  2. Add.
  3. Cool mixture.
  4. Cream.
  5. Add gradually working with a spoon until light.
  6. Add and mix well.
  7. Sift together, then add to creamed mixture.
  8. Cover and chill thoroughly.
  9. Divide the mixture into two parts.
  10. Roll each into a rectangle a little less than ¼ in. thick. Spread each with date filling, roll as for jelly roll and wrap in waxed paper.
  11. Chill in refrigerator overnight.
  12. Then cut in ¼ in. slices, arrange on oiled or greased cookie sheet and bake in a 400° F. oven for 10 to 12 minutes.

  • low heat; thick; cool; light; mix well; chill thoroughly; refrigerator overnight; 400° F.
