French Fried Sandwiches

Ingredients

  • 1 unsliced loaf ice-box rye bread
  • ½ lb sharp process cheese
  • 6 tblsp evaporated milk
  • 3 tblsp pickle relish
  • ¼ tsp dry mustard
  • Dash of salt and pepper
  • 2 eggs, beaten
  • 1/3 cup milk
  • 2 cups fine bread crumbs
  • 3 lbs shortening

Directions

  1. Cut loaf into thin slices
  2. Grate the cheese and mix thoroughly with the evaporated milk and pickle relish
  3. Place the filling between slices, spreading to the edge
  4. Press the slices together firmly, then dip in a egg-milk mixture - 2 eggs and 2/3 cup of milk with dash of salt pepper
  5. Coat both sides of the dipped sandwiches in the bread crumbs
  6. Heat the shortening in the deep fryer to 365°
  7. Place 4 or 5 sandwiches at a time in the hot fat. With a broad spatula hold the sandwiches under the surface of the fat until browned, about 2 minutes.
  8. Drain the sandwiches on absorbent paper and serve piping hot until sandwiches are fried Hold the fried ones in 250° oven
