French Fried Sandwiches
Ingredients
- 1 unsliced loaf ice-box rye bread
- ½ lb sharp process cheese
- 6 tblsp evaporated milk
- 3 tblsp pickle relish
- ¼ tsp dry mustard
- Dash of salt and pepper
- 2 eggs, beaten
- 1/3 cup milk
- 2 cups fine bread crumbs
- 3 lbs shortening
Directions
- Cut loaf into thin slices
- Grate the cheese and mix thoroughly with the evaporated milk and pickle relish
- Place the filling between slices, spreading to the edge
- Press the slices together firmly, then dip in a egg-milk mixture - 2 eggs and 2/3 cup of milk with dash of salt pepper
- Coat both sides of the dipped sandwiches in the bread crumbs
- Heat the shortening in the deep fryer to 365°
- Place 4 or 5 sandwiches at a time in the hot fat. With a broad spatula hold the sandwiches under the surface of the fat until browned, about 2 minutes.
- Drain the sandwiches on absorbent paper and serve piping hot until sandwiches are fried Hold the fried ones in 250° oven
