Ingredients

  • 2 gal. dill size pickles cut lengthwise in strips or cut in round slices or all crystal pickles
  • 1 gal of boiling water to which 1 pt of salt has been added
  • 1 gal boiling water
  • 1 gal boiling water & 2 tsp of alum
  • 2½ qts vinegar, 8 pts sugar & ½ cup mixed pickle spice

Directions

  1. 1st day - thru 7th let stand in brine of 1 gal of boiling water to which 1 pt of salt has been added - stir once every day
  2. 8th day - drain - add 1 gal boiling water - let stand overnight.
  3. 9th day - drain - add 1 gal boiling water & 2 tsp of alum - let [text clipped]
  4. 10th day - drain - add heated syrup → 2½ qts vinegar, 8 pts sugar & ½ cup mixed pickle spice
  5. 11th day - drain - reheat syrup + add to pickles.
  6. 12th day - drain + reheat syrup & add to pickles
  7. Put in crock + cover - no need to seal.

Timing

  • stand from the first through seventh day; stand overnight on the eighth day; ninth-day continuation clipped; repeat heated syrup on days ten, eleven, and twelve
