Spagetti Sauce For canning or Freezing

Ingredients

  • 3 qts Tomatoes - drain fluid from Tomatoes before measuring.
  • 1 qt onions, cut small
  • 1 Rounded tblsp. salt
  • 2 Tablesp Vinegar
  • 1 pt green peppers, cut small
  • 2 Tablespoons sugar
  • 1 Tablespoon Italian seasonings- or 1 tsp oregano, 1 Teaspoon Basil and garlic salt,

Directions

  1. Drain fluid from tomatoes before measuring.
  2. Chop onions and peppers, add seasonings, sugar and vinegar.
  3. Bring to Boil simmer, 2 or 3 hours.
  4. Be Careful That it Doesn’t Scorch!
  5. Put through the food Mill to Strain.
  6. Then cook down until thick and reduced about 1/3 in Volume.
  7. Pour into Hot sterile jars and seal, or freeze.

  • 2 or 3 hours
  • 10min

Temperature

  • Bring to Boil; simmer; cook down; Hot sterile jars; hot water Bath

  • draining vessel; measuring vessels; knife and cutting board; large cooking pot; stirring utensil; food mill; hot sterile jars and closures or freezer containers; hot-water-bath canner
