Corn Relish

Ingredients

  • 8 C corn kernels (about 14 ears)
  • 1 tsp curry
  • 1/2 tsp. pepper
  • 2 C sweet red & 2 cups green pepper
  • 1 tsp celery seed
  • 1 C onion, with sliced crossed out
  • 4 C vinegar
  • 1 C sugar
  • salt
  • 3 T. mustard
  • 1/4 C flour
  • 1/2 C. water

Directions

  1. Boil corn on the cob 10 minutes
  2. Cut corn from cob. Measure out 8 cups.
  3. Mix
  4. Boil 15 Min
  5. COMBINE
  6. COMBINE heads the mustard, flour, and water list; then mix all ingredients and boil 3 min
  7. Pack into hot sterilized jars

  • multiple boiling steps and hot sterilized jars
