Ron Guidry (Yankee pitcher) Wild Duck Special
Ingredients
- wild duck or ducks, onions, garlic, salt, pepper, vinegar, potatoes, 1 cup oil, grated onion, and 2 cups water
Directions
- Day before cooking Chop onions & garlic very fine.
- Season salt & pepper.
- Pat duck with vinegar; Slit 2 holes in breast of duck; add grated onion to juice
- Slice potatoes - add more mixture - stuff stomach - sit ducks covered pan with vinegar & seasoning - refrig overnight.
- Put 1 cup oil in heavy pan - cook ducks until brown.
Timing
- refrigerate overnight; return duck for 2 hours after a visible correction from 3 hours
Temperature
- cook ducks until brown; continue cooking after duck is returned
Equipment
- cutting knife, covered pan, refrigerator, and heavy pan
Notes
- The reverse side is blank except for a tape stain.
