Ron Guidry (Yankee pitcher) Wild Duck Special

Ingredients

  • wild duck or ducks, onions, garlic, salt, pepper, vinegar, potatoes, 1 cup oil, grated onion, and 2 cups water

Directions

  1. Day before cooking Chop onions & garlic very fine.
  2. Season salt & pepper.
  3. Pat duck with vinegar; Slit 2 holes in breast of duck; add grated onion to juice
  4. Slice potatoes - add more mixture - stuff stomach - sit ducks covered pan with vinegar & seasoning - refrig overnight.
  5. Put 1 cup oil in heavy pan - cook ducks until brown.

Timing

  • refrigerate overnight; return duck for 2 hours after a visible correction from 3 hours

Temperature

  • cook ducks until brown; continue cooking after duck is returned

Equipment

  • cutting knife, covered pan, refrigerator, and heavy pan

Notes

  • The reverse side is blank except for a tape stain.
