Potato Doughnuts

Yield: Recipe makes 2½ doz

Ingredients

  • 3 eggs
  • 3/4 cup sugar; 1/4 cup milk
  • 1/4 cup melted shortening
  • 1 cup (packed firmly) mashed potatoes
  • 2 1/2 cups flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon salt
  • 1 teaspoon Nutmeg

Directions

  1. Beat eggs light, add sugar gradually, stir in melted shortening, add potatoes + milk, Blend well,
  2. Sift remaining 4 dry ingredients together. Add to first mixture to make soft dough
  3. Chill thoroughly. Roll out about 1/4 inch thick on floured board, cut with cutter
  4. Fry in deep hot fat until brown on both sides; Turn only once during frying. Drain on soft paper.
