Potato Doughnuts
Yield: Recipe makes 2½ doz
Ingredients
- 3 eggs
- 3/4 cup sugar; 1/4 cup milk
- 1/4 cup melted shortening
- 1 cup (packed firmly) mashed potatoes
- 2 1/2 cups flour
- 1 teaspoon Baking Powder
- 1 teaspoon salt
- 1 teaspoon Nutmeg
Directions
- Beat eggs light, add sugar gradually, stir in melted shortening, add potatoes + milk, Blend well,
- Sift remaining 4 dry ingredients together. Add to first mixture to make soft dough
- Chill thoroughly. Roll out about 1/4 inch thick on floured board, cut with cutter
- Fry in deep hot fat until brown on both sides; Turn only once during frying. Drain on soft paper.
