Fruit Cake - Aunt Myra
Yield: one 9-inch tube cake or 4 small bread-pan loaves
Ingredients
- 1 lb seeded raisins
- 1 1/2 cups water or fruit juice; 1 1/2 cup sugar
- 1/4 cup brandy
- 1/4 cup butter
- 2 eggs beaten
- 2 1/2 cups sifted flour
- 1 teas. B. powder
- 1 “ soda
- 1/2 teaspoon salt; 1 teaspoon cinnamon; 1/2 teaspoon cloves; 1/2 teaspoon allspice
- 1 teas cinnamon
- 1/2 cup chopped mixed peel, annotated citron peel
- 1/2 cup chopped nutmeats
Directions
- Cook raisins, water and sugar 5 minutes.
- Add butter - cool
- Sift dry ingredients together
- Add nuts + citron peel
- Beat eggs add to cooled raisins. Mix all together good.
- Bake in 9 inch tube pan lined with waxed paper - or 4 small bread pans -
- Bake 1 1/2 hours in slow oven 275° to 300°

- cool; slow oven 275° to 300°

- cooking vessel, sifter, mixing and beating utensils, one 9-inch tube pan lined with waxed paper or four small bread pans, and slow oven
