Fruit Cake - Aunt Myra

Yield: one 9-inch tube cake or 4 small bread-pan loaves

Ingredients

  • 1 lb seeded raisins
  • 1 1/2 cups water or fruit juice; 1 1/2 cup sugar
  • 1/4 cup brandy
  • 1/4 cup butter
  • 2 eggs beaten
  • 2 1/2 cups sifted flour
  • 1 teas. B. powder
  • 1 “ soda
  • 1/2 teaspoon salt; 1 teaspoon cinnamon; 1/2 teaspoon cloves; 1/2 teaspoon allspice
  • 1 teas cinnamon
  • 1/2 cup chopped mixed peel, annotated citron peel
  • 1/2 cup chopped nutmeats

Directions

  1. Cook raisins, water and sugar 5 minutes.
  2. Add butter - cool
  3. Sift dry ingredients together
  4. Add nuts + citron peel
  5. Beat eggs add to cooled raisins. Mix all together good.
  6. Bake in 9 inch tube pan lined with waxed paper - or 4 small bread pans -
  7. Bake 1 1/2 hours in slow oven 275° to 300°

  • cool; slow oven 275° to 300°

  • cooking vessel, sifter, mixing and beating utensils, one 9-inch tube pan lined with waxed paper or four small bread pans, and slow oven
