Cinnamon Pickles

From Virginia [Clayson or Clay son]?.

Ingredients

• 1 cup hydrated lime
• 8 1/2 cup cold water
• 8 lbs cucumbers - peeled cut in half
• 1 cup vinegar
• 1 oz bottle red food coloring
• 1 tablespoon powder alum
• 3 cups vinegar
• 2 cups water
• 1 package large cinnamon candies
• 8 sticks cinnamon
• 10 cups sugar.

Directions

1. Scoop seeds out. Wash and cut into strips.
2. Put cucumbers in lime water for 24 hours. Rinse really well, then soak in clear water overnite. Rinse well again.
3. Add enough water to cover cucumbers.
4. Simmer for 1 hour drain.
5. Heat to boiling and pour over pickles. Let stand over nite.
6. Drain syrup off every morning for 2 mornings. Heat to boiling and add back on pickles. On 4th morning put into jars and process 10 minutes.

• 24 hours; soak overnite; simmer 1 hour; syrup stands over nite; every morning for 2 mornings; on 4th morning; process 10 minutes

• cold water; Simmer; Heat to boiling; repeated Heat to boiling; process
