Rhubarb Cake

Ingredients

• 1 1/2 cup brown sugar
• 1/2 cup butter or oleo
• 2 cups sifted flour
• 2 cups cut fine rhubarb
• 2 eggs - 1 cup milk
• 1 tsp soda - 1/2 tsp salt
• 1 tsp vanilla
• 1/2 cup white sugar
• 1/3 tblsp cinnamon & 1 cup coconut

Directions

1. Cream sugar + butter, add eggs, beat until creamy, add salt with milk, add vanilla, put in rhubarb.
2. add vanilla, last stir in rhubarb bake in sheet 9 x 13.
3. For topping mix 1/2 cup white sugar 1/3 tsp cinnamon + 1 cup flour. Put on before baking.

Temperature

• bake 350°
