Lime Pickles
Ingredients
- 9-11 lbs. sliced cucumbers unpeeled. 1/4 inch.
- 2 cups Mason’s Lime; 2 gallon cold water
- 5 lbs sugar
- 2 qts vinegar
- 1 Tablespoon of mixed pickling spice
- 1 oz green food coloring
Directions
- Soak in Mason’s Lime for 24 hours.
- Use large crock and full amount.
- Then soak in clear cold water for 4 hrs. changing each hour.
- Make the syrup.
- Bring to a boil and pour over pickles. Let stand overnite.
- Next Morning bring pickles and syrup to a boil and simmer for about 1 hour.
- Can Hot.

- cold water; Bring to a boil; simmer; Can Hot

- scale; knife and cutting board or slicer; measuring cups and spoon; two-gallon measure; large crock; cooking pot and stirring utensil; canning jars and closures; canning utensils
