Lime Pickles

Ingredients

  • 9-11 lbs sliced cucumbers unpeeled, about 1/4 inch thick.
  • Solution–of 2 cups lime to 2 gallon cold water
  • 5 lbs. sugar
  • 2 qts vinegar
  • 1/2 oz mixed spices (1 Tablespoon)
  • 1/2 oz green food coloring

Directions

  1. Soak in Mason’s (pickling lime) for 24 hours.
  2. (use large crock and use full amount)
  3. Then soak in clear cold water for 4 hours changing each hour.
  4. Make the syrup
  5. Bring to a boil and pour over pickles. Let stand over night. Next morning bring pickles and syrup to a boil and simmer for about 1 hour. Can hot.
