Lime Pickles
From Mom’s recipe.
Ingredients
- 9-11 lbs sliced cucumbers, unpeeled about 1/4 inch thick
- 2 cups lime to 2 gallons of cold water
- 5 lbs Sugar
- 2 qts vinegar
- 1 oz of green food coloring
- 1/2 oz of mixed spice (1 Tablespoon)
Directions
- Soak in Mason Lime for 24 hrs.
- use large crock and use full amount, then soak in clear cold water for 4 hours, changing each hour
- Make the syrup.
- Bring to a boil and pour over pickles, let stand over nite.
- Next morning bring pickles and syrup to a boil and simmer for about 1 hour.
- Can Hot and process for 10 min.
