Rye Melba Chips

Rye Melba Chips

Ingredients

  • 1 ice box rye loaf
  • 1/2 cup butter, melted
  • Grated Parmesan cheese or garlic salt.

Directions

  1. With a very sharp knife, cut rye loaf in paper-thin slices
  2. Place slices in single layer on cookie tins and allow to dry in air or in a 300° oven until crisp and the edges curl.
  3. Spread half of melted butter over bottom of large baking pan jelly roll tin or dripping pan type. Scatter slices over butter and drizzle rest of butter over the top
  4. Broil about 5 inches from heat until delicately brown. Stir chips so bottom pieces can brown. Don’t let chips get too dark.
  5. Sprinkle with parmesan cheese while hot, or with garlic salt, depending upon flavor you wish.

Temperature

  • 300-degree drying option and broiling about 5 inches from heat

Equipment

  • very sharp knife, cookie tins, large baking pan or jelly-roll or dripping pan, oven, broiler, and stirring utensil

Arwilda’s note: Changed “brown” to “curl.”. “brown” is crossed out before final readable word “curl.”
