Mexican Meat loaf

Yield: 6 - 8 servings.
Ingredients
- 2 lbs ground Beef
- 1 onin chopped
- 1/2 bell pepper chopped
- 1 (6oz) tomato paste
- 1 (10oz) chicken w/ rice
- 1 (10oz) cream of mushroom
- 1 (4oz) green chilies
- 1 (10oz) mild enchilada Sauce
- 1 (9oz) pkg nacho cheese tortilla chips
- 1 lb. cheese shredded
- salt, pepper & garlic to taste
Directions
- Brown ground beef, stirring until Crumbly, drain - Stir in onin, peppers, tomato paste, chicken w/ rice soup, cream mushroom soup, green chilies, salt, pepper, garlic & enchilada sauce.
- Simmer 20 minutes.
- Line Baking dish w/ chips - layer the Cheese and ground Beef mixture 1/2 at a time over the chips.
- Bake at 350 for 20 minutes.

- Simmer 20 minutes.
- Bake at 350 for 20 minutes.

- Brown ground beef; Simmer 20 minutes; Bake at 350
