Mexican Meat loaf

Yield: 6 - 8 servings.

Ingredients

  • 2 lbs ground Beef
  • 1 onin chopped
  • 1/2 bell pepper chopped
  • 1 (6oz) tomato paste
  • 1 (10oz) chicken w/ rice
  • 1 (10oz) cream of mushroom
  • 1 (4oz) green chilies
  • 1 (10oz) mild enchilada Sauce
  • 1 (9oz) pkg nacho cheese tortilla chips
  • 1 lb. cheese shredded
  • salt, pepper & garlic to taste

Directions

  1. Brown ground beef, stirring until Crumbly, drain - Stir in onin, peppers, tomato paste, chicken w/ rice soup, cream mushroom soup, green chilies, salt, pepper, garlic & enchilada sauce.
  2. Simmer 20 minutes.
  3. Line Baking dish w/ chips - layer the Cheese and ground Beef mixture 1/2 at a time over the chips.
  4. Bake at 350 for 20 minutes.

Timing

  • Simmer 20 minutes.
  • Bake at 350 for 20 minutes.

Temperature

  • Brown ground beef; Simmer 20 minutes; Bake at 350
