Easter Ricotta Pie

Ingredients
- 1/4 cup butter
- pinch salt
- 3 Tbsp sugar
- 1 cup flour
- 1/2 teas baking powder
- 1 # Ricotta, using the conventional pound sign
- 1 cup sugar
- 2 egg - beat slightly
- 1 tbsp grated lemon rind
- 1/4 tsp lemon extract or juice
- 1/4 tsp vanilla
- 1/2 " Cinnamon
- 1/2 cup heavy cream
Directions
- mix - add 1 egg -
- instead of water -
- grease baking dish
Timing: 40 min
Temperature: 350°
Equipment: greased 9-inch baking dish; oven
