Cocoanut Gumdrop Cookies

Ingredients

• 1 cup shortening; 1 cup brown sugar
• 1 cup white sugar; 2 cups sifted flour; 1 teaspoon soda; 1 teaspoon baking powder; 1 cup Gumdrops; 2 cups Rolled oats
• 1/2 teaspoon salt; 2 eggs
• 1 cup shredded coconut
• 1 " Gumdrops (omit black ones)
• 1 teaspoon vanilla

Directions

1. Cream shortening; add brown and white sugar and beat well.
2. Sift dry ingredients together and add to creamed mixture alternately with beaten eggs.
3. Add coconut + gumdrops which have been cut into small bits.
4. Add rolled oats and vanilla and mix well.
5. Shape into small balls and press with the tines of a fork.
6. Bake on a greased cookie sheet in a moderate oven (350°F) 15 minutes.
