Dry Fruit Cookies

Yield: Makes about 60 cookies.
Ingredients
- 2 eggs, well beaten
- 1 1/2 cups brown sugar
- 3/4 cup boiling water
- 3/4 cup lard or shortening
- 1 cup raisins or dates; 1 cup nut meats chopped fine
- 1 teaspoon vanilla
- 1 teaspoon soda
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 3 1/2 cups sifted flour
Directions
- Mix lard, sugar and boiling water, add eggs and the rest in order as written.
- Soda + Baking Powder sifted in Flour.
Temperature: 3/4 cup boiling water
Equipment: egg beater or whisk, mixing bowl, measuring tools, stirring utensil, sifter, and chopping tools
