Pineapple Marshmallow Icing

Ingredients
- 4 egg yolks
- 1/3 C sugar
- 3/4 C pineapple juice
- 16 marshmallows cut in quarters; 1 C heavy cream whipped
- 1/4 t vanilla
Directions
- Beat 4 egg yolks - 1/3 C sugar till juicy.
- add 3/4 C pineapple juice.
- Cook over low heat till thick (5 min).
- Beat 4 egg yolks - 1/3 C sugar till yellow. Add 16 marshmallows cut in quarters - Chill - fold in 1/4 t vanilla 1 C heavy cream whipped.
Timing: 5 min
Temperature: low heat; Chill
Equipment: measuring vessels; mixing bowl; beater or whisk; saucepan; stove; knife and cutting surface; chilling vessel or refrigerator; cream-whipping tool; folding utensil
