Stewed Tomatoes

Ingredients
- 8 tomatoes peeled and cut into fourths
- 2 onions sliced
- 2 green peppers sliced
- 4 tbsp. olive oil
- 1 tbsp. sugar
- 1/2 tsp. oregano
- 1/4 tsp. basil
- 3 tbsp. cornstarch mixed in 2 tbsp. water
- salt and pepper
Directions
- Heat olive oil. Add tomatoes and simmer slowly for ten min. Add peppers, onions and seasonings. Simmer for ten minutes longer. Thicken with cornstarch and bring to boil for 3 minutes.
Timing: 10 minutes; 10 minutes longer; 3 minutes
